High-Glucose Diets Stress the Liver

If you are eating a diet high in sugar (especially sucrose and high-fructose corn syrup) your liver is unable to metabolise these sugars.  Glucose is used for energy or stored as glycogen, but when glycogen stores are full, excess glucose is converted into fat through a process called de novo lipogenesis.  Fructose, metabolised almost exclusively in the liver, is rapidly converted into triglycerides (fat), which can lead to fatty liver disease).

Over time, this fat accumulation causes non-alcoholic fatty liver disease (NAFLD), impairing the liver’s ability to function.  The liver also struggles to regulate uric acid levels, leading to hyperuricemia (excess uric acid in the blood).
